Because I’m snacking on these…

Um, sure, they’re on the diet plan. The Presidential Debate is on right now – enough said.
So anyhoo, the chocolate goodness reminded me that this would be the perfect time to post my latest foodie fave. I stumbled upon Jen Migonis and her Pumpkin Chocolate Chip Cookies recently. And let me tell you, Jen’s blog is just as delish as these cookies.

Ingredients
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chipsDirections
Combine pumpkin, sugar, vegetable oil, and egg.
In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
Dissolve the baking soda with the milk and stir in.
Add flour mixture to pumpkin mixture and mix well.
Add vanilla and chocolate chips.Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
I used part whole wheat flour, part white, and it worked just as well. And I may or may not have used more than 2 cups of choc chips. Just saying.
Then I turned my back for one minute, I swear, and this is what happened to these babies…
Ok… I may have eaten seven or so like someone else I know.

Pumpkin and chocolate is probably the best thing about fall! And chocolate chips are healthier because they are tiny ;)

Hi Leovi – they do look rich, don’t they!! But they really are not that heavy. Just a good basic cookie with Yum fall flavors – and a few bits of chocolate ;)
